Sweetened Coconut (Macapuno)

This recipe serves 6. 

Ingredients:

  • 250g (1 cup) sugar
  • 500ml (2 cups) water
  • 500g (4 cups) grated young coconut or sport coconut flesh (also known as macapuno)
  • 1 tablespoon butter
  • 1 teaspoon vanilla essence

Method:

  1. Combine the sugar and water in a saucepan and bring to the boil.  Simmer and cook until the liquid clears.  Add the coconut flesh and simmer until the mixture thickens, about 5 minutes.
  2. Stir in butter and vanilla essence.  Heat through until the butter dissolves completely.  Remove from the heat and set aside to cool before serving.
