Orange and Avocado Salad with Zesty Dressing

Orange and Avocado Salad

Ingredients:

  • 3 tbsp finely chopped red onion
  • 1 tbsp Basil
  • 1 tsp Chilli
  • 3 tbsp orange juice
  • 2 tbsp mild honey
  • 1/3 cup extra-virgin olive oil
  • 5 seedless oranges
  • 3 avocados
  • 230g (8oz) baby arugula leaves

Method:

  1. For the dressing: In a screw-top jar, place chopped red onion, Basil, Chilli, orange juice, honey and olive oil. Cover and shake well until blended. Season to taste with salt and freshly ground pepper.
  2. To assemble the salad: Peel, pith and slice seedless oranges into rounds. Halve, pit, peel and thinly slice avocados. Divide baby arugula leaves between individual salad plates. Top with oranges and avocados.
  3. Spoon dressing over salad. Enjoy!

Kiwi Tiki Torches

This recipe makes 12 servings.

Ingredients:

  • 1 fresh pineapple, peeled and cut into 1 inch chunks
  • 4 medium kiwifruit, peeled and cut into 3/4 inch chunks
  • 2 cups fresh strawberries, halved

Ingredients for White Chocolate Dipping Sauce:

  • 1 cup heavy whipping cream
  • 6 white chocolate Toblerone candy bars (3.52oz each), broken into pieces
  • 1/4 cup finely chopped macadamia nuts
  • 1-2 teaspoons rum extract
  • 1/3 cup flaked coconut, toasted

Method:

  1. Alternately thread the pineapple, kiwi and strawberries onto 12 metal or wooden skewers, set aside.
  2. In a large saucepan over medium heat, bring cream to a boil. Remove from the heat; stir in candy bars until melted. Return to the heat. Stir in nuts and extract; heat through. Transfer to a fondue pot or 1 1/2 quart slow cooker; keep warm. Sprinkle with coconut. Serve with fruit kabobs.

Country Apple Dumplings

Country Apple Dumplings

This recipe makes 16.

Ingredients:

  • 2 large granny smith apples, peeled and cored
  • 2 (10oz) cans refrigerated crescent roll dough
  • 1 cup (250ml) butter
  • 1 1/2 cups (375ml) white sugar
  • 1 teaspoon ground cinnamon
  • 1 (12 fluid oz) can or bottle mountain dew

Method:

  1. Preheat oven to 350 degrees F. Grease a 9 X 13 inch baking dish.
  2. Cut each apple into 8 edges and set aside. Seperate the crescent roll dough into triangles. Roll each apple wedge in crescent roll dough starting at the smallest end. Pinch to seal and place in baking dish.
  3. Melt butter in a small sauceapan and stir in the sugar and cinnamon. Pour over the apple dumplings.
  4. Pour mountain dew over the dumplings.
  5. Bake for 35 to 45 minutes inb the preheated oven, or until golden brown.
