Easy No-Bake Chocolate Macaroons

Chocolate Macaroons
Ingredients:
  • 500ml (2 cups) granulated sugar
  • 125ml (1/2 cup) butter
  • 125ml (1/2 cup) milk
  • 6 tablespoons cocoa
  • 125ml (1/2 cup) fine shredded coconut
  • 750ml (3 cups) oatmeal

Method:

  1. Combine the sugar, butter, milk and cocoa together in a large pot and bring to a boil for about 2 – 3 minutes, stirring constantly.
  2. Take pot off stove and add the coconut and oatmeal.  Mix until everything is coated.
  3. Place on a wax paper lined cookie sheet by heaping tablespoon-full.  To have these cookies ready quickly, cool in refrigerator or leave and let cool to room temperature.
Note: These cakes can be frozen in an airtight plastic container for about 2-3 months.
