Cream of Mango & Pomelo

Ingredients:

  • 150g sugar
  • 300ml water (for melting sugar)
  • 100g sago (you can substitute this with tadpole available from Phoon Huat)
  • 1000ml water (for boiling sago)
  • 500g mango puree
  • 100g vanilla/mango ice cream (depends on your taste; use either flavor)
  • 200g pomelo
  • 350g mango cubes (cut mango into cubes)
  • 750g ice cubes

Method:

  1. Cut the mango into cubes and break the pomelo into tiny pieces.
  2. Boil sugar and water and leave to cool.
  3. Boil the water (meant for sago) and when the water is boiling, switch to small fire and add in the sago.  Stir continuously for 5 minutes and switch off the fire.  Make sure the pot is covered and stir every other 5 minutes (otherwise the sago will be lumpy and stick together).
  4. After half an hour, switch on a small fire and stir the sago mixture continuously for another 5 minutes.  Switch off the fire and repeat steps no. 3 & 4 until the sago is clear (i.e. not whitish).
  5. When the sago is clear, drain the water and wash the sago with tap water.  Drain the excess water.
  6. Mix well the mango puree, ice cream, pomelo, mango cubes and ice cubes together.
  7. Add the sugar mixture and sago to the mango puree mixture and mix well.
  8. Refrigerate the mixture and serve cold.
