Cream of Mango & Pomelo

Ingredients:
- 150g sugar
- 300ml water (for melting sugar)
- 100g sago (you can substitute this with tadpole available from Phoon Huat)
- 1000ml water (for boiling sago)
- 500g mango puree
- 100g vanilla/mango ice cream (depends on your taste; use either flavor)
- 200g pomelo
- 350g mango cubes (cut mango into cubes)
- 750g ice cubes
Method:
- Cut the mango into cubes and break the pomelo into tiny pieces.
- Boil sugar and water and leave to cool.
- Boil the water (meant for sago) and when the water is boiling, switch to small fire and add in the sago. Stir continuously for 5 minutes and switch off the fire. Make sure the pot is covered and stir every other 5 minutes (otherwise the sago will be lumpy and stick together).
- After half an hour, switch on a small fire and stir the sago mixture continuously for another 5 minutes. Switch off the fire and repeat steps no. 3 & 4 until the sago is clear (i.e. not whitish).
- When the sago is clear, drain the water and wash the sago with tap water. Drain the excess water.
- Mix well the mango puree, ice cream, pomelo, mango cubes and ice cubes together.
- Add the sugar mixture and sago to the mango puree mixture and mix well.
- Refrigerate the mixture and serve cold.
